Line caught breaded haddock

Good day today managed to catch an nice piece of haddock for lunch.

First thing I did was fillet the fish and then skin it.

Here is a simple process that turned out delicious! First I coated the fish in strong white flour,  then whisked egg (we don't yet have our own chickens but we have a supply of fresh eggs from hens that run free) and finally dipped in bread crumbs.

I like to use olive oil in a nice hot pan as this makes a good crust sealing in all the goodness and flavour.
Enjoy your haddock and keep fishing!
